Crispy Fried Potatoes are one of my favourite side dishes, far nicer than chips in my opinion. This is how I make mine :
Ingredients (to serve 4 generously)
5 potatoes peeled and cubed
30 ml flour
seasoning (I use PnP potato seasoning)
herbs such as origanum or rosemary optional
Roughly 60 ml cooking oil, must be enough that the pan is never dry at the bottom.
Directions
Steam or boil potatoes until cooked (prick with a fork, must feel soft right through, but not so soft that they fall apart)
Transfer to a bowl, add flour and seasoning and mix so that all potatoes are coated
Heat the oil in a frying pan
Fry potatoes on a relatively high temperature (my dial goes to 6 and I use 5), turning regularly until beautifully brown
Transfer to serving bowl lined with paper towel to absorb excess oil, remove paper towel and serve
