Fresh Strawberries give icing natural flavour and colour


I am still on my quest to find the perfect Vanilla Cupcake recipe.  Today I tried the BBC recipe and it is better than the one in ‘500 Cupcakes’, however I will have to try it again as I forgot to add the milk which may improve them more.  I was however very pleased with my icing.  I bought strawberry essence which I was going to use with pink food colouring.  When I opened the bottle the essence smelled very artificial, as I had fresh strawberries I decided instead to mix my butter icing in the food processor with 3 fresh strawberries and use no milk or cream.  The result was delightful!  I am not anal about food colouring but it is so much better to have natural flavour and colour.
