There’s nothing like home made pizza. I make the dough in my bread machine and we make our own tomato topping. This is my husband’s recipe. You can either use it as is or give it a whizz with a blender.
TOMATO PIZZA TOPPING
INGREDIENTS
about half a medium or smallish onion
1 tin chopped peeled tomatoes
15 ml tomato paste
a clove or 2 of garlic crushed
a healthy bunch of basil and oregano
salt and pepper to taste
a glug of sherry
METHOD
- Soften the onion and garlic over moderate heat in olive oil, but do not brown
- Add the tomato and simmer
- Add herbs, seasoning and sherry
- Simmer for about 15 min
I often double or triple the recipe and freeze for future use
