Cowboy cookies (Oat and Raisin cookies)

Cowboy Cookies

Cowboy Cookies

A long time ago my uncle, his Canadian wife and children packed up their tobacco farm in Rhodesia* and moved to Canada.  As a farewell family gathering we spent a weekend together on the Natal South Coast before they left Africa.   That weekend aunt Marg made a batch of cookies which we all loved, she called them Cowboy cookies and gave me the recipe.  I have been baking them regularly for more than 30 years now.

150 grams Margarine

1 cup (250 ml) light brown sugar

1 cup (250 ml) dark brown sugar

2 eggs

2 cups (500 ml) flour

1 tsp Baking powder

pinch salt

2 cups oats

1 cup raisins

Beat margarine and sugar, add eggs, beat until creamy

Sift flour, baking powder and salt into the mixing bowl – combine

Add oats and raisins

roll into balls and flatten slightly

Bake at 180 deg C for about 15 mins

* I use the names Rhodesia or Zimbabwe depending on the time which I am referring to.  e.g. My grandfather owned Pocket’s Bakery in Salisbury Rhodesia or next week we are going to Lake Kariba in Zimbabwe
