Angela Day – Chocolate filled chocolate biscuits


I have only previously tried 2 Angela Day recipes but that is changing.  What I have tried so far have been so good.  These chocolate cookies are perfect for Valentines day.  I made these yesterday and my husband is taking them to work to give to the ladies in his department as a little Valentines gift.  I did not sandwich the cookies together as I prefered the idea of them being open with the topping showing.  I used a slab of white chocolate instead of white chocolate discs.  I am yet to find mint extract or mint essence anywhere so stuck to the pink.  I did not have strawberry extract either but I did have some frozen pureed strawberries which I made by slowly heating chopped strawberries with about a teaspoon of sugar.  I defrosted and warmed the strawberry puree before adding it to the melted chocolate, I did also add a drop of pink gel food colouring.

The cookie dough was a little bit dry and cracked when rolling, this didn’t matter too much as the cracks were covered with icing.  This may have been because I used Orgran ‘No Egg’ instead of real eggs because my son has an egg allergy.  In future I will use about a tablespoon less flour than specified, this should mean that the dough is less dry.
