Sometimes the good old-fashioned recipes are the best. Apple crumble is my son Fjord’s favourite
PASTRY
120 g butter
125 ml sugar
1 egg
2 ml vanilla essence
2 cups (500 ml) flour
10 ml baking powder
pinch salt
FILLING
1 large tin pie apples
60 ml raisins or sultanas (optional)
50 ml brown sugar
cinnamon for dusting
INSTRUCTIONS
Heat oven to 200° C
Grease pie dish, mine is a rectangle 28 x 19 cm
Pastry
Cream the butter and sugar until pale and fluffy, add egg and vanilla essence, beat well
Sift flour, baking pwd, and salt into the butter mix. Beat – the mixture will be crumbly
halve the mixture, press half into the base of the pie dish and bake for about 5 mins, refrigerate the other half
Filling
Combine the tart apples and sugar (and raisins if using)
Spoon onto the pastry base
Dust the top with cinnamon
Sprinkle the remaining pastry crumb mix over the top and bake for 25 mins until golden brown
