Cliff has decided that he likes plain and simple granola and I have been struggling to find the perfect one. I decided to make my own and after looking at a few recipes, I made up this one which has basic ingredients. You can add whatever else you like, dried fruit, nuts or seeds in what ever quantities you like. With Fjord being allergic to nuts I feel safer giving him home made granola rather than risk a stray nut from a factory. It also works out way cheaper than shop bought granola.
BASIC SIMPLE GRANOLA
INGREDIENTS
½ Cup (125 ml) golden syrup
¼ Cup (60 ml) brown sugar
1/3 Cup 80 ml Oil (coconut or sunflower)
4 Cups oats
½ C Coconut
½ Cup Oat bran (make putting oats in a coffee grinder or food processor)
1 tsp vanilla essence
½ tsp salt
METHOD
line a pan with baking paper
Combine dry ingredients
Heat oil, syrup and sugar in a saucepan until the sugar is dissolved.
Add salt and vanilla
Mix wet and dry ingredients together
Press down lightly in pan
Bake at 150° C for 40 – 60 min
CHOCOLATE GRANOLA VARIATION
Add 10 ml cocoa powder to the dry ingredients and add between half and 1 Cup choc chips once the wet and dry ingredients are combined
