Domi’s favourite Malva Pudding

If I want to lure my daughter Domi around for a visit, Malva pudding is excellent bait to draw her here.  Last night she visited with her husband Duncan and they both love this recipe.

MALVA PUDDING (serves 8)

INGREDIENTS

1 Cup (250 ml) sugar

1 egg

1 Tbs (15 ml) apricot jam

1 Cup flour

1 tsp bicarbonate soda

pinch salt

1 Tbs butter

1 tsp vinegar

1 Cup milk

Sauce

1 Cup cream

2 Tbs (30 ml) butter

2/3 Cup (160 ml sugar)

60 ml hot water

METHOD

  1. Beat egg, sugar and jam together.
  2. Sift flour, salt and Bicarb
  3. Melt butter, add vinegar
  4. Mix ingredients, including milk alternating wet and dry.
  5. pour into a dish approx 22 cm x 18 cm
  6. Bake at 180° C for 50 – 60 minutes

For the sauce

Combine all ingredients in a saucepan, heat gently until butter is melted and pour over the hot pudding, leave for a few minutes to saturate.

Serve warm with custard (I also rather like to add a scoop of ice cream).

  1. Snap 😁 we had the exact same dessert on Saturday night (left overs on Sunday on Instagram) saying goodbye for the final time to my brother and his girlfriend leaving SA for good. Thought it was an appropriate dessert. Offhand the recipe looks exactly the same, except I cheated and we had ultramel or cream. Family preference 😁
