Slow cooker BBQ pulled chicken recipe

Pulled chicken rolls or wraps make a great Friday night supper

When I got my slow cooker I discovered an awesome page Just Slow Cooker recipes, with really good recipes, I think I’ve already made about half of the recipes on her site. The children had friends over for National sleepover day on 9 May and I knew that the BBQ pulled chicken would be great for kids. I was upset when I returned to her page and found that the recipe for her BBQ sauce had been replaced with using bought sauce so I made up my own based on this recipe.

BBQ sauce

  • ½ Cup Tomato puree
  • ½ Cup Tomato sauce
  • 2 cloves garlic crushed
  • ¼ Cup Brown Sugar
  • ¼ Cup Cola
  • ¼ Cup lemon juice
  • 1 Tbs Mustard
  • 1 Tbs Worcestershire sauce
  • 1 Tbs soy sauce
  • 1 Tbs chutney
  • 1 Tbs sweet chilli sauce
  • 1 Tbs liquid smoke
  • a shake of chilli powder
  • 1 Tbs corn flour dissolved in 40 ml cold water (only add 1 hour before end of cooking time)
  1. Combine sauce ingredients except for corn flour
  2. Place 1.5 kg chicken breast fillets in the slow cooker and stir in the BBQ sauce
  3. Cook on low for 5 hours, add corn flour and cook for another 1 hour
  4. Stir a few times during the cooking process
  5. Shred chicken using 2 forks

Freeze whatever is left over
