When I got my slow cooker I discovered an awesome page Just Slow Cooker recipes, with really good recipes, I think I’ve already made about half of the recipes on her site. The children had friends over for National sleepover day on 9 May and I knew that the BBQ pulled chicken would be great for kids. I was upset when I returned to her page and found that the recipe for her BBQ sauce had been replaced with using bought sauce so I made up my own based on this recipe.
BBQ sauce
- ½ Cup Tomato puree
- ½ Cup Tomato sauce
- 2 cloves garlic crushed
- ¼ Cup Brown Sugar
- ¼ Cup Cola
- ¼ Cup lemon juice
- 1 Tbs Mustard
- 1 Tbs Worcestershire sauce
- 1 Tbs soy sauce
- 1 Tbs chutney
- 1 Tbs sweet chilli sauce
- 1 Tbs liquid smoke
- a shake of chilli powder
- 1 Tbs corn flour dissolved in 40 ml cold water (only add 1 hour before end of cooking time)
- Combine sauce ingredients except for corn flour
- Place 1.5 kg chicken breast fillets in the slow cooker and stir in the BBQ sauce
- Cook on low for 5 hours, add corn flour and cook for another 1 hour
- Stir a few times during the cooking process
- Shred chicken using 2 forks
Freeze whatever is left over
