I had no intention of doing much if anything for Halloween today, I have a to-do list as long as my arm and I’m feeling a little overwhelmed. The problem with my kitchen is that it calls and snares me. Oh well, the children are happy.
First we made Some Jack o’ Lantern cupcakes. Vanilla cupcakes coloured with a bit of orange gel icing and decorated.
Then on Pintrest I found these Itsy Bitsy Spider cookies and worked with that idea. I used an old coconut cookie recipe
COCONUT BISCUITS
225 grams butter
1 Cup Icing Sugar
¼ Cup white sugar
1 egg
1 tsp vanilla essence
2 Cups Flour
2 ½ Cups coconut
METHOD
- Cream butter, icing sugar and sugar
- Add egg and vanilla – mix
- Add flour & coconut – mix
- Roll into balls and flatten
- Bake at 180° C for about 15 mins
If doing them for Halloween top with chocolate discs or choc chips pressed into the top before baking. After baking either add the legs by using a toothpick to ‘pull’ the chocolate or as I did draw them in with writing icing.
An everyday alternative for the cookies is to add choc chips to the dough.
Now I MUST, phone the library to renew overdue books, go to the shops, send out notices for a meeting and get ready for Bridge Banner Protest against e-tolls.
