These Chocolate Muffins with a Mocha sauce make a delicious pudding or tea time treat. The recipe is adapted from one in Quick & Tasty Chocolate – South Africa
INGREDIENTS
55 g butter
55 g dark chocolate
2 eggs
75g icing sugar
75 g self-raising flour
25 g cocoa powder
FOR MOCHA SAUCE
145 g dark chocolate – broken into pieces
80 ml espresso or strong coffee
50 ml cream
30 ml icing sugar
FOR TOPPING
about 4-6 squares white chocolate
serve with whipped cream optional
INSTRUCTIONS
Grease muffin tray (I used the very shallow one).
Melt chocolate and butter in microwave for roughly 50 seconds stirring halfway
In separate bowl combine eggs, sugar, flour and cocoa powder, mix in the melted chocolate and butter
Spoon into muffin tray, 1 TBS per hole, bake for 10 – 15 min at 180° C
While baking prepare Mocha sauce, place chocolate, coffee and 45 ml cream into a small saucepan and heat gently. Simmer for 1 – 2 mins until sauce has thickened slightly, keep warm.
Allow muffins to cool on a wire rack for 5 mins.
Spoon mocha sauce over muffins. Warm white chocolate in microwave and spoon into a small ziplock bag, snip a corner off the bottom of the bag and pattern over the top of the muffins.
Serve topped with whipped cream
